What gifts should I give her parents?

Her parents are from the Han Clan, and originate from the Guangzhou region. They lived in Hong Kong before moving to California. They're not very traditional in their ways but they still have roots in their culture.

I am also looking for a way not just to give them gifts when I ask for their blessing but for other occasions when I visit. This way it's not so obvious I'm trying to butter them up so they'll say yes. My girlfriend thinks this is what I should do as well.

So glad to hear from you again.

As your future parents-in-law are from the Han Clan and they lived in Hong Kong and now California, plus you are not Chinese, they won't be so strict on the Chinese traditions.

So my suggestion is that you prepare very special, thoughtful gifts. Show them you paid special attention to prepare it.

If you could match their hobbies that would be perfect. For instance, if your girlfriend's mother likes chocolate cake, you can make a chocolate cake yourself and send it to her. I am sure she would be moved.

If her father prefers Calligraphy, then you can send him high quality Huizhou ink as a gift.

All the above won't cost a lot money but would meet their full satisfaction and they won't think you are buttering them up.
